Hello all
Can I enter brackets round some chords (to show that the chords are optional)

like this

|G-7 |C7 | Fmaj7 | (C-7 F7) |
|Bb maj7 |etc etc

No, but you can use the alternate chords (see Tutorials>Editor) however they are not played by the player.
