i see an option for nylon guitar or acoustic guitar on latin tunes. but the sound is the same as the piano. am i missing something?

Assuming you have purchased the Latin style pack to use the sounds, in the mixer, tap on the treble (G) clef to change instruments.
Also the instrument choices change depending on the playback style selected. The Latin - Brazil:Bossa Acoustic has nylon and acoustic guitar (and no piano option) for instance.
